Hidden Vegetable Tomato Pasta Sauce

I make a big batch of this staple hidden vegetable tomato pasta sauce every week and it also serves as a foundation for many other meals. Containing 7 different vegetables, it is jam-packed with nutrients. Serve it either chunky or blended up, that way no one will know how good it is for them!

  • Chopping board
  • Knife
  • Peeler
  • Garlic press/grater
  • Small bowls for prepped veg
  • Large saucepan
  • Measuring spoons
  • Wooden spoon
  • Hand blender
  • Jug
  • Containers for the cooked sauce

Ingredients
  

  • 1 red onion finely diced
  • 1 leek finely chopped
  • 1 celery stick finely chopped
  • 2 carrots grated
  • ½ courgette/zucchini grated
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 3 tins chopped tomatoes 400g each
  • 400 ml water
  • 1 tbsp tomato puree/paste
  • 1.5 tbsp maple syrup
  • 1 tsp oregano dried
  • 1 bay leaf
  • 2 vegetable stock cubes
  • 1 tsp sea salt
  • tsp black pepper

Instructions
 

  • Prepare the vegetables.
  • Heat the olive oil in a saucepan.
  • Sauté the freshly prepared vegetables.
  • After 5 minutes add the chopped tomatoes and the remaining ingredients and bring to the boil.
  • Reduce the heat and simmer, stirring occasionally.
  • After 20 minutes the sauce will be ready.
  • For a smooth sauce, remove the bay leaf, allow to cool and blend.
